Au Gratin Potatoes

One of my favorite dishes to eat is Au Gratin Potatoes from the “Betty Furness Westinghouse Cookbook”. This book was passed down from my grandmother to my mother and now I use it too.
Ingredients
2 Tablespoons butter
2 Tablespoons all-purpose flour
1 teaspoon salt
1 cup milk
1 cup cheese,grated
2 cups(6 small potatoes) baking or Russet potatoes,thinly sliced
¼ cup bacon (optional)
4 green onions, diced (optional)
Directions
1.Preheat oven to 400 degrees fahrenheit
2.Peel and slice potatoes thinly (set aside for later )
3.Cook the bacon
4.Dice up the green onions
5. In a saucepan melt the butter. Once the butter has melted gradually add in the flour and salt until they are fully combined.
6.Add in the milk gradually until thickened while constantly stirring.
7.Add in the green onions, and half of the bacon and the cheese of your choosing. And remove from the heat.
8.Place the potatoes into a greased baking dish, pour the sauce on top and lastly sprinkle the leftover bacon over the top.
9.Place in the oven for 30 to 40 minutes, until lightly browned. The potatoes are done when you can easily pierce them with a fork.
