Dr. Mike’s Mexican Quinoa Slow Cooker

Dr. Mike's dish is perfect for all seasons. I decided to make it three ways: pair it with tortilla chips which makes it perfect for football parties, make a burrito, and fold it into a spring roll served with an avocado aioli.


Ingredients

  • 1 lb. ground turkey

  • 1 lb. pork sausage

  • 1 ½ cup uncooked quinoa, rinsed

  • 1 can (15.5 ounces) black beans drained and rinsed

  • 1 cup frozen corn

  • 2 cans (15 ounce) diced tomatoes

  • 2 cloves garlic, minced

  • 1 medium onion chopped

  • 1 or 2 jalapeño (depending on your preference for the heat ) finely chopped

  • 1 cup water

  • 2 cups enchilada sauce

  • 2 tablespoons new chili powder

  • 1 tablespoon cumin

  • 2 teaspoons coriander

  • 1 cup Mexican blended cheese

  • 3 green onions chopped

  • ¼ cup freshly chopped cilantro

  • Spring roll wraps

Spring rolls with Avocado Sauce

  • 1 avocado

  • ⅔ cup sour cream

  • spring roll wrap

  • water

  • cornstarch

  • cooking spray

Instructions

  • Brown ground turkey and the pork sausage. Once the meat is fully browned, place in the slow cooker.

  • Add in quinoa, black beans, frozen corn, tomatoes, garlic, onion, jalapeños, water, enchilada sauce, chili powder, cumin, coriander, green onion, cilantro. Cover with lid and cook on high for 3 hours. Stir occasionally to make sure everything is cooked thoroughly. Once all the liquid is absorbed it is done.

Spring rolls

Preheat oven at 425 degrees

  • Make liquid mixture that will help seal the spring roll wrap by blending together ¼ cup water to 1 teaspoon cornstarch

  • If the wrappers are in fridge set them out to get to room temperature

  • Once they come to room temperature, place the wrap at a diamond angle.

  • Place spoonful of filling 1 inch above bottom point, but not too much for it to spill out.

  • Make sure all the edges are wet from the water cornstarch mixture. (You can use the tip of your finger to apply the mixture all around the edges. This will help seal later.)

  • Take the bottom point, pull it up and over to cover the filling. Then fold the points on each side toward the middle. Then you can continue to roll the entire wrap up until the roll meets the top point. Place on cooking sheet which has been sprayed with cooking spray.

  • Bake in oven for 20 min.

  • In a separate bowl, blend together the sour cream and avocado. Serve this sauce with the warm spring rolls.

Serving suggestion

You can also serve this meat mixture on a tortilla wrap as a burrito or serve with chips for a delicious appetizer!
