Fiesta sweet potatoes

Ingredients
2 large sweet potatoes
2 tablespoons olive oil
½ teaspoon chili powder
½ teaspoon sea salt
½ cup chorizo
½ cup corn
½ cup black beans
2 small onions
1 green pepper
Directions
1.Preheat oven to 400 degrees Fahrenheit
2.Cut the ends of the potatoes off (no need to peel skins)
3.Cut the potato in half horizontally. Lay one half, flat side down and cut into slices lengthwise. If slices are too big, slice them lengthwise again into thin strips
4. Place potato slices into a medium bowl and evenly coat with olive oil
5. Next add the chili powder and sea salt, and toss to make sure everything is evenly coated
6.Cover a cookie sheet with parchment paper
Lay the sweet potatoes in a single layer on the cookie sheet
7.Bake for about 35 minutes, until tender
8.While the potatoes are baking, cook the chorizo on medium low heat until thoroughly cooked. Drain fat and aside for later.
9.Dice up the onion and green pepper and sauté until thoroughly cooked and tender. Set aside
10. In an oven safe dish mix together the sweet potatoes, peppers, black beans and corn.
11. Cover with the cheese and return to the oven. Bake until the cheese has melted. Best served when hot.
