Pancakes

Ingredients
1 ½ cups all purpose flour
3 Tablespoons sugar
½ teaspoon cinnamon
2 teaspoons baking powder
2 eggs
3 Tablespoon butter
1 ¼ cups milk
1 teaspoon honey
Extra: Blueberries or chocolate chips
Directions
1. Combine all dry ingredients - flour, sugar, cinnamon, and baking powder.
Mix well and set aside.
2. In another bowl combine all the liquid ingredients - honey, milk , butter and eggs.
3. Gradually add the dry ingredients into the bowl of wet ingredients. Stir until well combined
between each addition of dry ingredients.
4. Bring griddle or large flat saucepan to medium low heat
5. Once the griddle is at the right temperature (350 degrees) use butter or cooking spray,
whichever you prefer, to spray the pan.
6. Use a ladle or ice cream scooper to scoop and pour the pancake batter onto the hot pan.
If you choose to add blueberries or chocolate chips, this is the time to sprinkle them on top
When the batter starts to bubble on the top of the pancakes it is then time to flip over the
pancake using a large spatula. The bottom side, now on top, will be lightly browned.
Remove the pancake from the griddle after just another minute, once the top side is also
lightly browned.
If you wish to add blueberries or chocolate chips, stir them gently into the batter just before pouring onto the griddle.
Serve warm with maple syrup!
