Vegetable Quiche

Ingredients

½ red pepper (diced)

½ green pepper (diced)

¼ onion (diced)

3 cups fresh spinach (chopped)

8 oz mushrooms

1 tomato (diced)

4 eggs

1 cup milk

1 teaspoon black pepper

¼ teaspoon paprika

¼ teaspoon cumin

½ teaspoon salt

½ cup mozzarella cheese (shredded)


Directions

1. On a cutting board dice up the red and green peppers and set aside


2. Dice the onion and set aside.

3.Cut off the stems of the spinach and slightly chop the leaves

4. Slice the mushrooms, if you did not buy pre sliced

5.Dice the tomato and set aside


6.Preheat oven to 350 degrees Fahrenheit

7.On the stove top, heat a small saute pan on medium low heat

8.Spray pan with cooking spray and sauté the peppers.


9.When the peppers are almost cooked, add the onions. Cook until the onions are translucent.

Remove pan from the heat

10.Spray 9 inch pie plate with cooking spray

In a medium bowl use a fork to slightly stir together the 4 eggs.

11.Add the cumin, black pepper, salt, paprika and milk. Stir until thoroughly mixed.


12.Layer all the diced cooked vegetables and the spinach leaves in the pie plate

13.Sprinkle the shredded cheese over the vegetables

14.Pour the egg mixture evenly over the vegetables

15.Bake in oven for 30 to 35 minutes at 350 degrees, until lightly browned on top and the eggs are fully cooked. (To check if eggs are done, Insert knife in center and pull back out. The knife should come out clean)


Let cool slightly to allow the pie to set and serve warm. (Leftovers are good cold too)
